The 17th-century monk Dom Pérignon pioneered methods to turn still wine into sparkling, and the creators of his namesake have never stopped innovating. Unusually, every bottle of Dom Pérignon is the product of a single vintage; it is only made in the best years and released after lengthy lees-ageing.
Led by Chef de Cave Vincent Chaperon, this once-in-a-lifetime masterclass will demonstrate the art of ageing the Dom Pérignon way. Guests will taste ten wines across five decades back to 1983 – including several long-aged Plénitude bottlings, which capture the separate stages of a wine’s development.

VINCENT CHAPERON
Vincent Chaperon is the Chef de Cave of Dom Pérignon. Born into a Bordeaux winemaking family, he studied viticulture and oenology in Montpellier before honing his appreciation for terroir across legendary estates in Bordeaux, Chile, and Argentina. In 1999, he moved to Champagne, joining Moët & Chandon to deepen his knowledge of local winemaking techniques. Vincent joined Dom Pérignon in 2005, beginning a decisive 13-year apprenticeship under former Chef de Cave Richard Geoffroy. Taking the helm in 2019, Vincent now guides the Maison's creative ambition, bringing thoughtful energy and technical expertise to shape each unique vintage in pursuit of harmony.


NATALIE EARL
Natalie Earl is Decanter’s regional editor for France, overseeing and commissioning French content across both print and digital.
After a degree in French and Italian, she initially worked in wine tourism in the south of France before returning to the UK in 2016 to join the tastings team at Decanter, making the shift to the editorial team in 2021. She writes and tastes wines for the magazine and website, with a particular focus on the wines of Languedoc.
