FELIX GABILLET
Winemaker

Since 2015 Felix Gabillet has been Hambledon’s full time winemaker on site and has just celebrated his 10th anniversary with us. A graduate of Changins University in Switzerland, Felix manages the winery on a day-to-day basis, with the support from our Chef de Cave, Hervé’s Jestin at the crucial stages of winemaking, such as pressing, fermentation, bottling and most importantly the final assemblage.
Born and raised in the Loire Valley, Felix grew up among Chenin Blanc, Cabernet Franc and Gamay vines, with early exposure to the wine world through family harvests in Bourgueil and his grandfather’s cellar full of aged Chinon and Gigondas. Though not from a winemaking family, Felix’s early memories of vineyard meals and old vintages ignited a lifelong fascination with wine. He formally studied viticulture and oenology near Tours and went on to gain hands-on experience in wineries around the world, including New Zealand, Australia, California, Canada, Luxembourg, and Switzerland, before joining Hambledon in 2015. Felix is known for his thoughtful, terroir-driven approach to sparkling wine, and his curiosity continues to fuel his craft.
